  • 1 cup cherry tomatoes, halved
  • 1 small cucumber, sliced
  • ¼ red onion, thinly sliced
  • ¼ cup Kalamata olives, pitted and halved (optional)
  • Fresh parsley for garnish (optional)

Instructions

Marinate and Cook the Chicken:

  1. Marinate the Chicken: In a small bowl, mix olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Coat the chicken breasts in the marinade, cover, and refrigerate for at least 15 minutes (or up to 2 hours for more flavor).
